Butterfly Blue Pea Flower, aka Bluebell Vine, Cordofan Pea, Blue Pea, Asian Pigeonwings, Aparajita, and Darwin Pea, comes from the Clitoria ternatea plant.  It is considered a tisane which is an infusion made from the leaves, flowers, roots, berries of any plants other than the Camellia Sinensis (Tea) plant.  This tisane is naturally caffeine free.

This plant is native to South Asia and has been used for centuries in cooking, as a natural dye, in medicine and in cosmetics. 

The magic happens when you take an infusion of Butterfly Blue Pea Flower which is a beautiful indigo colour and add acid (lemon or lime).  This tisane is a natural indicator and changes from an indigo blue to a magnificent magenta when the pH is lowered.

HOT BREWING METHOD:
Bring filtered or freshly drawn water to a rolling boil and let cool to roughly 180'F/82'C. Place approximately half a teaspoon of Matcha in your cup. Infuse with 8oz/250ml of water, whisk briskly and enjoy.

HOT BREWING METHOD:
Bring filtered or freshly drawn cold water to a rolling boil. Place 1 slightly heaping teaspoon of loose tea for each 7-9oz / 200-260ml of fluid volume in the teapot. Pour the boiling water into the teapot. Cover and let steep for 3-7 minutes according to taste (the longer the steeping time the stronger the tea).

Different Ways to Drink Butterfly Blue Pea Flower:

1.  Steep it in Water - drink it hot (add sugar or honey if desired)
